Ingredients:
YIELD Approx. 1 cup
• 2 TBL olive oil
• 1 medium onion finely chopped
• 2 garlic cloves minced
• 1 cup sour cream
• 1/4 cup mayonnaise
• 2 TBL finely chopped chives
• 1 TBL Coffee Cherry Fine
• 1 TBL fresh lemon juice
• Kosher salt, white pepper to taste
• 1 TBL freshly chopped parsley
Directions:
1. Heat oil in a small skillet over medium. Cook onion and garlic, stirring occasionally, until onion is deep golden brown and very soft, 35-40 minutes.
2. Mix caramelized onions with remaining ingredients except the fresh parsley in a bowl. Let sit for 30 minutes.
3. Sprinkle with chopped parsley and serve with your favorite chips.
